Chicken Corn Salsa

I have another recipe for you to try - This one is a Dump in the Crock Pot, go sew for 4-6 hours, and tell the family how very very hard you worked to make this yummy meal for them.

And the next day serve it just a bit different - and you have TWO days to Stitch!!!

PS - Remember - Not a professional chef, nor even a really adventurous eater!

Chicken Corn Salsa

Ingredients:
1 - 16 oz Frozen Corn - I use the Super Sweet , or someitmes I get the Petite Sweet White Corn
1 - Can of Rotel
1 - Can of Black Beans ( drained)
3-4  Frozen Chicken Thighs

For later:
Sour Cream
Guacamole
Shredded Cheese
Taco Chips
and for day 2 - Taco shells

In the Crockpot
Put in the Frozen Chicken Thighs
Put the corn in on top
Next dump in the beans
and pour the Rotel on top

Cook on Low 5-7 hours or on high 4-5 hours   ( in the summer mine is done in 4, winter 5 and I have no idea why)

Open the lid, and shred the chicken

It is now ready to serve

The first day I put out Taco chips and all the other stuff and let them make Nacho salad type meals

The second day I heat up taco shells - and voila - Tacos!!

So there you go!! You have a LOT of time to stitch now right???

( can you tell food is one of THE most important things in my household this summer - with all 3 boys and the visitors around???)

Great Escape Mustang Sanctuary

I really love this Great State that I live in!! I love exploring all that there is to do..... and so

We took an adventure to:

It was pretty cool!!

First we took a tour of their ranch facilities, and saw the horses in action. Some of the Mustangs are being gentled for Adoption, or have been adopted, and these trainers are working with them.

Or - as is the case here, one of the wild mustangs gathered was pregnant and they were awaiting the birth of this little beauty::

Isn't she just the cutest?  We wanted her!! she is only one month old - and so adorable.

After the Headquarters tour we headed out to the sanctuary - and oh man - is was so cool. You all may know I sort of love horses, and there were 25 or so of them - lotta love for me!!

This guy wanted a treat - he came really close to us.

and then - these two
They did not want to be left out
they saw all the commotion and came running

and check out the 'do on this one!
Is that not comical???

They roam on an over 800acre pasture and are so content

This is Milk Chocolate
Dark Chocolate
and White Chocolate

I named them....
I am sure it will stick!!
( right???)

 The one on the left
Looks just like my Brother in laws horse
It was kinda wierd.....

They have an old windmill
it used to pump water until the created a pond
But I liked it!

and then!
As a part of my Photo Challenge Group
we were supposed to take a High Key photo
So I experimented with this barn
I think I got pretty close to the description of High key

This is their logo

I don't know
there is just something about watching horses move that is just mesmerizing

All in All it was a great Adventure
the land was purchased by the owners father with the intent of helping
provide a sanctuary for these mustangs that aren't really adoptable,
and to help the other Mustangs get adopted out to loving homes

and now I want one.... or six.... six would be good, I could get them in all colors and have a horse rainbow!!!  and.... maybe the baby - ya.... the baby

Wrangler Man sort of threw me in the car and locked the doors.....

I just don't know why???

IF YOU ARE NOT USING AN EASY ANGLE:
Cut 4 - 3 1/8 inch squares and Cut them on the diagonal for 8 *wings*

Background Fabric (or funky teal in my quilt)

3.    Cut 1 - 2 ¾ strip width of fabric
a.    Sub cut into 16 -  2 ¾ in square
I got 14 squares from my strip, and used the scrap from the large squares to cut the last two.

IF YOU ARE USING THE COMPANION ANGLE
4    Cut  2 – 2 ¾  Strip WOF

Cut 4 – 5 11/16 inch squares –Cut along the diagonal both ways ( so you come up with 8 pairs of *geese*
:

You should have this cut from your Dark #1

And this ( over to the right) from your Background

Step #2
Take 6 of your 10 inch background squares and 6 of your 10 inch Dark #1 squares. Draw a diagonal line on the back of your background square. Stitch 1/4 inch on each side of the drawn line, Slice.  Press

You will have 12 – 9 ½ inch Half Squares

Step #3
Grab 4 (or 2 pairs) of your Background *Geese* and the 4 pairs of Dark #1 Wings.
Stitch them into flying geese. Your geese should measure 2 ¾ x 5 inches

Take the 1 Dark 5 inch square and 4 of the background 2 ¾ inch squares

Lay them out like this and stitch together.

At the end of this clue – you should have one 9 ½ inch Sawtooth Star, and 12 - 9 ½ inch half squares.   The extra's that you have cut will be used for future clues - so save them ;-)

Mystery A6 Fabric Choices and Kevin the Quilter Mystery Progress

That!! Is a long title.... but it makes me feel important!

If you read my blog ( or have read it in the past few days) you know.... there is a Mystery A Foot!!!

It is called A6 as it is the 6th mystery I have written for the MysteryQuilts4Military group - however - I have written MANY more ....

For the Fabric Requirements - I posted them Wednesday  - My Fabric choices were shown, but I have decided to make another one!!  ( cuz it is just that fun) and here are my Fabric Choices for this one:

The Creamy White is my Background, and the Navy is Dark #1, Lt Blue is Dark #2, and the Red is my Light #1 .

I show you this so that you know the values will work well together, and although my light is a dark - it will really refer to the placement in this quilt.

and!!

My Kevin the Quilter Mystery
Sapphire Stars

I have most of the first step done - just need a little more Iron time

I try to iron early in the morning,
When I think there is still a possibility it won't be hot

I am not a fan of Hot!

PS - A6 Step 2 ( Clue 2) Comes out Wednesday .... be prepared

Banana Pudding Parfait

The next mystery Clue will be posted Wednesday - it will take you right at one hour - so! You can make this, sew a little bit, and then when your clue is over - you can reward yourself with dessert!!

OR

Better yet - have your Spouse/Partner bring you dinner so that you can sew the day away - and reward them with dessert!!

Dessert always wins me more stitching time around here

Banana Pudding Parfait

Ingredients:

1 Vanilla Cook and Serve Pudding
( you can use instant but I prefer to make it look hard, and that I am REALLY REALLY working for my family)
1 tub of cool whip
2 bananas

This makes 4 pudding parfaits - I have boys that will eat 37 if I allow them to - so I double it!

I made the Cook and Serve pudding and let it cool for about an hour
(PS - that is enough time to actually do your clue!)

Then I set the cups up and start layering

I layer in this order:

Pudding
Banana Slices - about 4-5
Whip Cream
Pudding
Banana slices
and Whip Cream

Aren't they pretty?

I put them in the fridge and then when dinner is not quite ready
cuz I have been quilting
I pull them out and say

"Would you like to start with Dessert first"

and they quit whining,.... just like that!

and they are happy

Independence Day Parade

I think I told you about us learning to Decorate a float?

Our 4-H club teamed up with Erickson Floral in Greeley CO and designed a float for the Independence Day Parade in Greeley.

It was a lot of work - and I didn't do most of it !!  The kids had a great time, and our 4-H leader has these awesome ideas. So even though it is not the 4th of July - I am going to share our photos!!!

(ps - the hay is mine tho - ha ha)

This is our float in the planning progress -
see the cow at the front
That is mine
( The best kind to have, he is clean)

Adding more things
We tried to have a representation of all the projects that our 4-H kids do
And we even hung quilts!!

A casualty!!!

It took us a while to get moving
the parade started at 9am with flyovers - this is what went over me
as I was sitting on the float
There is us - in all of our glory
Little bit is facing the other way - so you can see his back if you search

We think we did good
All the kids had a great time and worked together so well
I think our leader may need a nap - but she was awesome too!

I tried to upload a video for you of the flyover -
I hope it works

EnProvence Progress and Kevin the Quilter Mystery

In case you didn't know.... Kevin the Quilter is hosting his very First Mystery Quilt!!! Yay!!!

And you all know  I love mysteries.... And I know! The timing is at the same time as mine... ( sort of) but what the heck!! What is just One! More! Project!   ??

Hubby says it's one more thing to keep me out of trouble... so get to stitchin'!!

This is my start of Clue #1!!
I still have the stitching to do - but the cutting was fun!
However!!
Kevin promised it would help me whittle down my scraps... I'm thinking he doesn't know the extent of my scraps!!

And My EnProvence!!
I have the insides all stitched together.
I wasn't sure I was going to add the outer border.... But After looking at it for a few minutes
I'll get to stitchin and put it on!

Check this out!
Our 4H Group is going to be in a parade!
So the Lovely people at Ericksons Floral in Greeley are sponsoring our float
and!! They taught us all about decorating it!!!

We do have some more to do - but we had so much fun so far
( the boy in the turquoise - he is mine)

Just so you know
I don't like HOT so much
So on days like this weekend where we hit 100
I dream of this!!

Alright
Back to work!!
Hope you have a Happy 4th of July
and I will see you Wednesday for the start of:

Chicken Cornbread Enchiladas

Quilters - I am first here to tell you that I am NOT a Commercial Cook, or a Professional Recipe Writer.... However..... I have 4 men who LOOOOVE to eat - and so.... I cook....

Today I am sharing with you an easy recipe, that takes all of 5 minutes to put together, and takes about 25 minutes to cook....

Which means... that while you are taking care of your family.... you can finish HALF of the First Mystery clue ... IF NOT MORE!!

So... the Fabric Requirements come out Wednesday - Part of the Fabric Requirements is
**Finding your fabrics ( duh)
***** And Ironing your Fabrics ..... cuz all responsible quilters LOVE to iron right?   Ha ha... Don't leave me now!!

Here is what you need:
3 Cups of Shredded Chicken  ( I used a Rotisserie Chicken)
1 Can of Pinto Beans : Drained
1 Can of Black Beans:  Drained
1 Can of Rotel
1 Can Of Olives : Drained  .... Unless you don't like olives like Little Bit, then you can use a can of corn : Drained
1 Cup of Sour Cream
2 Cups off Shredded cheese

and your favorite Corn Bread Mix  ( we use Pamelas Gluten Free - since one of us has celiacs)

Mix all of your ingredients (Except the Corn bread mix)
in a bowl   .... this was my attempt to make a pretty photo of the ingredients.....

Mix them all up

Pour them all in an 9 x 13 pan , I sort of smooshed them down so it filled every corner

Make your cornbread according to those direction
and pour it over the top

Cook on 375 for about 30-35 minutes

and Voila!!! Chicken Cornbread Enchiladas -
Oh ya - I topped them with Guacamole, and Sour Cream
Middle bit added more cheese
Husband added hot Sauce

we all think he is wierd

So there you go - One nights dinner that is easy, and has leftovers, and you can get some of the first step of the Mystery done!!

See you Wednesday for the Start!!!
