I may have mentioned that my husband gardens?? Did I mention that he planted 27 Zucchini plants this year? Did I mention that I am learning LOTS of new ways to use said Zucchini???
This is SOUP!!!
i shredded a ton of it over the summer and froze it - so!!
I got out my trusty crockpot and tossed in:
- *5 cups of Shredded Zucchini
- *3 diced Medium potato's ( I did not peel them as they were those soft yellow potato's)
- *2 cups of Chicken Broth,.
I cooked it on Low for about 5 hours - then - I turned the heat up to high and added
*1 8 oz Block of Cream Cheese
Cooked it for 25 minutes
Then I stirred it up - I probably should have used my hand blender, but it was soft enough to just stir. I think if I had used my Hand blender the cream cheese would have smoothed in faster.
We were kind of starving, so we ate a bowl - by the second bowl all the cream cheese had melted in.
But! In our defense we had been out riding for 4 hours, and it was actually chilly that day - Not Winter cold yet - but chilly.... .
And we had a grilled cheese sandwich to go with it
That was NOT a Bad way to use Zucchini!

Winter soup on a chilly day. . .YUM! Zucchini is an amazing vegetable as it can be used in so many dishes.
That sounds yummy! I never know how to use up zucchini, except in bread, so this soup would be a good thing to have in the recipe box. But - 27 plants? There should be a law against that, lol!

Mmmm, it sounds delicious as I love zucchini. I like zucchini noodles in place of pasta too!
You know, a potato based soup is a great way to add in all kinds of other veggies. And my veggie of choice for potato soup is sausage! LOL. I meant spinach. Yeah, spinach and sausage!
Sounds like a wonderful soup for a chilly day. I hope he learned not to plant that much zucchini next year.
