I tried a new Pasta idea...
are you ready?
Pumpkin Alfredo Pasta
- *12 oz pasta ( I used Gluten free Barilla Pasta)
- *1 Cup Pumpkin Puree ( from my Pumpkins!! - and it was FRESH - I made it that morning)
- *1 Cup Cream
- *1/2 cup parmesan
Cook the pasta according to the package
In a pan - Stir the Pumpkin and Cream, I cooked just to a boil - stirring it over medium heat until that boil started. Then !!
Tossed in the Parmesan cheese to melt in the mix - and poured it over the pasta!!
Ta da!!! it was yummy and of course, I ate it as is, my guys added a steak to the side

ReplyDeleteLooks delicious. I love pumpkin with pasta, it is surprisingly satisfying. Homemade puree would just take it over the top.
ReplyDeleteI love it and have made it that way for awhile - my husband doesn't like vegetables and I try to get them in him any way I can - I also add a 1/2 to 1 cup of mashed vegetables like pumpkin or squash to anything he won't notice it in - like stew, chili, etc
