Most of my fabrics are small...I start by measuring. Most of my fabrics are smaller pieces that won't work for binding anyway. Then I usually just pick a color (or the same fabric) from the border or a block in the quilt. This has worked for me on scrappy quilts, so your suggestion to use black should work well.
